Tuna Casserole on the Quick


Time to pull another meal out of my butt. Tonight's creation is box mac 'n cheese tuna casserole.

  • Two boxes of macaroni and cheese (and the ingredients to make them into "food")
  • Two cans of tuna
  • Cheese of your choice
  • Italian bread crumbs
  • A small onion
  • A green pepper
Prepare mac 'n cheese as directed on box. Cook pasta only until slightly firm. Include two cans of drained tuna. Chopped onion and green pepper. Mix well and dump all into a casserole dish. Grate cheese, about a half cup (I used mozzarella) and sprinkle it on top. Pour in some extra milk until it comes to the brim. Then sprinkle on some Italian bread crumbs on top.

Cover and bake at 350° for 30 minutes. Remove cover and place under broiler until golden brown. Remove from oven and serve with ground pepper to taste. Viola!

  1. When preparing meals on the fly that others will be eating, perhaps it's better not to use the "pulled out of my butt" metaphor. Just sayin'.
